A Look Back

Born and raised in Strümpfelbach, Baden-Württemberg, Juan Amador discovered his love for cooking early. During his apprenticeship at Gasthof Lamm, he learned to appreciate the value of regional cuisine — a foundation that would later influence his unique culinary identity. His journey continued through Munich and the legendary Schlosshotel Bühlerhöhe.

In 1997, while in Barcelona, he met Ferran Adrià — the pioneer of molecular gastronomy — and was instantly captivated. It was a time when this new form of cooking revolutionized the culinary world. Molecular cuisine wasn’t about smoke and spectacle, but about extracting the purest essence of flavor — a break from classical French traditions.

From Germany to Vienna

After several years in fine dining, Amador opened his first Restaurant Amador in 2004 in Langen near Frankfurt, where he perfected his philosophy: “Cooking is not art — it’s passion and devotion to the product and the guest.”

Many awards, Michelin stars, and loyal guests followed. But it was love that brought him to Vienna — his marriage to his wife Victoria in 2006 marked the start of a new chapter. Today, Amador feels completely at home in the Austrian capital, where his restaurant continues to set culinary standards.
